How To Cook Chicken Soup With Parsnip And Orange

Chicken is quite rightly one of the best loved meats in the world.


It is almost fat free, is a great source of protein, exceedingly versatile and is the key ingredient in many weight loss recipes.

For many people, the memorable comfort food is chicken soup. This classic soup is a flexible recipe and is frequently prepared for people who are in poor health, but it is equally valuable for dieters.

Here is a truly scrumptious chicken soup recipe with a surprise ingredient for you to prepare at home.

First, a couple of tips on buying the chicken you will need.

If you can get hold of an organic chicken, do so, as it will be a purer meat, with less chance of it containing added hormones. It's also a sound policy from the animal welfare point of view, as a lot of the mass produced chickens are bred in conditions that are quite disgraceful.

Here is the recipe for you.

The ingredient list is as follows:

2 fresh oranges (juice only)
1 Ground Peppercorns (black)
2 onions (chopped and peeled)
3 tablespoons of olive oil
750 ml of chicken stock
10 cloves of garlic (halved)
8 parsnips (either fresh or pre-roasted)
1 teaspoon of salt

Description:

Heat oil in a pan. Place onions and cook until soft. Let 10 minutes pass and then place garlic cloves and the roasted parsnips. Leave some of the parsnips to be added later.

Fry vegetables until they are soft for 10 to 15 minutes. Stir occasionally while adding the parsnips (should be pre-roasted).

Pour the chicken stock into the vegetable mix. Put in some black pepper and salt. Allow to simmer up to 20 minutes. Liquidize this after.

To enhance taste, add seasoning and orange juice.

This dish serves 6 family members as a appetizer, but you might prefer to serve it as a main course with freshly baked bread, in which case it feeds four family members easily.
